Description

A comforting and flavorful casserole combining ground beef, beans, corn, and cheese, all cooked effortlessly in a crockpot.


Ingredients

  • 1 pound ground beef
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 2 cups cooked pasta or rice
  • 1 can black beans, drained and rinsed
  • 1 can corn
  • 1 can diced tomatoes with green chilies
  • 1 packet taco seasoning
  • 1 cup salsa
  • Salt and pepper to taste

Instructions

  1. Brown the ground beef in a large skillet over medium heat until fully cooked, about 5-7 minutes. Drain off any excess fat.
  2. Combine the cooked ground beef, cooked pasta or rice, drained black beans, corn, diced tomatoes, taco seasoning, and salsa in your crockpot. Stir until well combined.
  3. Season the mixture with salt and pepper to taste.
  4. Cover the crockpot and cook on low for 4-6 hours or on high for 2-3 hours.
  5. During the last 30 minutes of cooking, sprinkle shredded cheese on top and cover again to allow it to melt.
  6. Serve warm and enjoy!

Notes

You can prepare the ingredients the night before and store them separately. Consider using pre-cooked pasta or rice to save time.
