A comforting and flavorful casserole combining ground beef, beans, corn, and cheese, all cooked effortlessly in a crockpot.
Ingredients

- 1 pound ground beef
- 1 cup shredded cheese (cheddar or Mexican blend)
- 2 cups cooked pasta or rice
- 1 can black beans, drained and rinsed
- 1 can corn
- 1 can diced tomatoes with green chilies
- 1 packet taco seasoning
- 1 cup salsa
- Salt and pepper to taste
Instructions
- Brown the ground beef in a large skillet over medium heat until fully cooked, about 5-7 minutes. Drain off any excess fat.
- Combine the cooked ground beef, cooked pasta or rice, drained black beans, corn, diced tomatoes, taco seasoning, and salsa in your crockpot. Stir until well combined.
- Season the mixture with salt and pepper to taste.
- Cover the crockpot and cook on low for 4-6 hours or on high for 2-3 hours.
- During the last 30 minutes of cooking, sprinkle shredded cheese on top and cover again to allow it to melt.
- Serve warm and enjoy!
Notes
You can prepare the ingredients the night before and store them separately. Consider using pre-cooked pasta or rice to save time.
