Description

A vibrant pasta salad that combines seasoned ground beef, fresh vegetables, creamy ranch dressing, and crunchy Doritos for an explosion of flavor.

Ingredients

Scale
  • 1 pound seasoned ground beef
  • 8 ounces pasta (e.g., rotini or macaroni)
  • 1 cup cherry tomatoes, halved
  • 1 cup corn (canned or frozen)
  • 1 bell pepper, diced
  • 1 cup shredded cheese (e.g., cheddar or Mexican blend)
  • 2 cups Doritos, crushed
  • 1/2 cup ranch dressing
  • 1/4 cup taco seasoning
  • Salt and pepper to taste

Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain the pasta and let it cool completely.
  2. Prepare the Beef: In a skillet over medium heat, cook the seasoned ground beef. Brown it well until fully cooked. Drain excess fat and allow the beef to cool slightly.
  3. Mix It All Together: In a large mixing bowl, combine the cooled pasta, seasoned beef, halved cherry tomatoes, corn, diced bell pepper, and shredded cheese.
  4. Add the Dressing: In a small bowl, whisk together the ranch dressing and taco seasoning until well combined. Pour this blend over the pasta salad and toss everything together thoroughly.
  5. Incorporate the Crunch: Gently fold in the crushed Doritos, reserving a handful for topping. Adjust salt and pepper to your liking.
  6. Serve and Garnish: Serve chilled or at room temperature, garnishing with the reserved Doritos for that extra crunch.

Notes

For enhanced flavors, prepare the salad a few hours or a day in advance but keep the Doritos separate until serving to maintain their crunch.
