- 2 cups fresh blueberries
- 1/2 cup sugar
- 2 tablespoons cornstarch
- 1 tablespoon lemon juice

- 1/4 teaspoon cinnamon (optional)
- 1/2 cup water
Instructions
- Combine the fresh blueberries, sugar, cornstarch, lemon juice, salt, and optional cinnamon in a medium saucepan.
- Pour in the water and gently stir to combine.
- Place the saucepan over medium heat and stir constantly as the mixture thickens.
- Once it starts to bubble, reduce heat to low and let it simmer for an additional 2-3 minutes.
- Remove from heat and let it cool for a few minutes.
- Use as a filling for pies, cakes, or enjoy straight from the bowl!
Notes
Make this filling ahead of time and store in the fridge for up to a week. It also freezes well for up to three months.
