Description

A quick and delicious chicken quesadilla filled with melted cheese, seasoned chicken, and creamy refried beans, perfect for any occasion.


Ingredients

  • 1 cup refried beans
  • 2 cups leftover rotisserie chicken, shredded
  • 1 cup melted cheese (Monterey Jack or Cheddar)
  • 4 flour or corn tortillas
  • 2 tablespoons olive oil
  • 1/2 cup sour cream
  • 1/2 cup salsa

Instructions

  1. Heat a non-stick skillet over medium heat and add olive oil.
  2. Spread a generous layer of refried beans on one half of a tortilla.
  3. Scatter shredded chicken over the beans and top with cheese.
  4. Fold the tortilla in half and place it in the skillet.
  5. Cook for 2-3 minutes on each side until golden brown.
  6. Remove from the skillet and slice into wedges.
  7. Serve with sour cream and salsa.
