- 2 cups leftover rotisserie chicken, shredded
- 1 cup melted cheese (Monterey Jack or Cheddar)
- 4 flour or corn tortillas
- 2 tablespoons olive oil
- 1/2 cup sour cream
- 1/2 cup salsa
Instructions
- Heat a non-stick skillet over medium heat and add olive oil.
- Spread a generous layer of refried beans on one half of a tortilla.
- Scatter shredded chicken over the beans and top with cheese.
- Fold the tortilla in half and place it in the skillet.
- Cook for 2-3 minutes on each side until golden brown.
- Remove from the skillet and slice into wedges.
- Serve with sour cream and salsa.
