Description

Delicious chicken quesadillas combining tender chicken, gooey cheese, and vibrant bell peppers, all wrapped in crispy tortillas.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup shredded cheese (cheddar or a blend)
  • 4 large tortillas
  • 1/2 cup diced bell peppers
  • 1/2 cup diced onions
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Heat 1 tablespoon of olive oil in a large skillet over medium heat.
  2. Add 1/2 cup of diced bell peppers and 1/2 cup of diced onions to the skillet and sauté until softened, about 3 to 4 minutes.
  3. Combine 2 cups of shredded chicken with salt and pepper in a mixing bowl.
  4. Place one tortilla in the skillet and sprinkle 1 cup of cheese on one half.
  5. Add a portion of the seasoned chicken mixture on top of the cheese.
  6. Fold the tortilla over to enclose the filling.
  7. Cook for 3-4 minutes on each side until golden brown and cheese is melted.
  8. Slice into wedges and serve warm.
