Description
Delicious chicken quesadillas combining tender chicken, gooey cheese, and vibrant bell peppers, all wrapped in crispy tortillas.
Ingredients

- 2 cups cooked chicken, shredded
- 1 cup shredded cheese (cheddar or a blend)
- 4 large tortillas
- 1/2 cup diced bell peppers
- 1/2 cup diced onions
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Heat 1 tablespoon of olive oil in a large skillet over medium heat.
- Add 1/2 cup of diced bell peppers and 1/2 cup of diced onions to the skillet and sauté until softened, about 3 to 4 minutes.
- Combine 2 cups of shredded chicken with salt and pepper in a mixing bowl.
- Place one tortilla in the skillet and sprinkle 1 cup of cheese on one half.
- Add a portion of the seasoned chicken mixture on top of the cheese.
- Fold the tortilla over to enclose the filling.
- Cook for 3-4 minutes on each side until golden brown and cheese is melted.
- Slice into wedges and serve warm.
