Instructions
- Heat the skillet: Set a large skillet over medium heat and add a small amount of cooking oil.
- Spread refried beans: Take each tortilla and spread a generous layer of refried beans on one half.
- Layer chicken and cheese: Top that layer with your shredded rotisserie chicken and a tumble of shredded cheese.
- Fold the tortillas: Carefully fold each tortilla in half to create a quesadilla.
- Cook to perfection: Place the quesadilla in the skillet and cook for about 2-3 minutes on each side or until golden brown and the cheese has melted.
- Cut and serve: Remove the quesadilla from the skillet, let it cool for a moment, and cut it into wedges.
- Dress it up: Serve with a side of salsa and a dollop of sour cream.
