Description

  • 2 cups leftover rotisserie chicken, shredded
  • 2 cups shredded cheese (cheddar or Monterey Jack)
  • 8 large flour tortillas
  • Cooking oil (for frying)

Instructions

  1. Heat the skillet: Set a large skillet over medium heat and add a small amount of cooking oil.
  2. Spread refried beans: Take each tortilla and spread a generous layer of refried beans on one half.
  3. Layer chicken and cheese: Top that layer with your shredded rotisserie chicken and a tumble of shredded cheese.
  4. Fold the tortillas: Carefully fold each tortilla in half to create a quesadilla.
  5. Cook to perfection: Place the quesadilla in the skillet and cook for about 2-3 minutes on each side or until golden brown and the cheese has melted.
  6. Cut and serve: Remove the quesadilla from the skillet, let it cool for a moment, and cut it into wedges.
