Indulge in these luscious chocolate strawberry mousse domes that combine creamy mousse with a delightful cookie base and a glossy white chocolate glaze.

- 2 cups fresh strawberries, hulled and pureed
- 1/2 cup granulated sugar
- 1 1/2 cups heavy cream, chilled
- 1 tablespoon unflavored gelatin
- 2 tablespoons cold water
- 8 ounces white chocolate, chopped
- 4 tablespoons unsalted butter, melted
- 1 cup cookie crumbs (graham crackers or digestive biscuits)
Instructions
- Puree the strawberries with half of the sugar in a blender until smooth.
- Bloom the gelatin by sprinkling it over cold water and letting it sit for about 5 minutes.
- Melt the bloomed gelatin gently in a microwave or over a warm water bath until dissolved.
- Whip the heavy cream with the remaining sugar until soft peaks form.
- Fold the strawberry puree and melted gelatin into the whipped cream gently.
- Spoon the mousse into dome molds, filling them about three-quarters full.
- Prepare the base by mixing cookie crumbs with melted butter and pressing it on top of the mousse in each mold.
- Freeze the molds for at least four hours or overnight until firm.
- Melt the chopped white chocolate with a splash of heavy cream until smooth.
- Unmold each mousse dome and pour the melted white chocolate over each one.
- Decorate with fresh strawberries, whipped cream, or chocolate shavings, and chill briefly before serving.
Notes
Prepare the mousse a day in advance for the best flavor. Store uneaten domes in an airtight container in the refrigerator for up to 3 days.
