Description

Ingredients

  • 4 salmon fillets
  • 2 tablespoons olive oil
  • Fresh herbs (dill, parsley, or cilantro)
  • Zest and juice of 1 lemon
  • 1 cup cherry tomatoes, halved
  • 1 bunch asparagus, trimmed

Instructions

  1. Prep your ingredients: Rinse your salmon fillets and pat them dry, then season with salt and pepper.
  2. Sauté your vegetables: Heat a tablespoon of olive oil in a non-stick skillet over medium heat, add cherry tomatoes and asparagus, and cook for about 5 minutes.
  3. Cook the salmon: In the same skillet, add more olive oil and sear salmon fillets skin-side down for 4-5 minutes, then flip and cook for an additional 3-4 minutes.
