Description

A vibrant and flavorful Mediterranean dish featuring grilled chicken, fresh vegetables, and creamy feta cheese, perfect for quick dinners or meal prep.


Ingredients

  • 1 lb chicken strips
  • 1 can chickpeas, drained and rinsed
  • 1/2 cup olives, sliced
  • 1/2 cup feta cheese, crumbled
  • 1 cucumber, diced
  • 1 cup tomatoes, diced
  • 3 tbsp olive oil
  • 2 tbsp lemon juice
  • 1 tsp oregano
  • Salt and pepper to taste

Instructions

  1. Marinate the chicken strips with olive oil, lemon juice, oregano, salt, and pepper for at least 30 minutes.
  2. Cook the marinated chicken in a grill pan over medium-high heat for about 6-8 minutes on each side until fully cooked.
  3. Prepare the bowl by mixing chickpeas, olives, feta, cucumber, and tomatoes in a large bowl.
  4. Assemble the cooked chicken slices on top of the salad mix.
  5. Dress with a mixture of olive oil, lemon juice, salt, and pepper.
  6. Serve immediately or divide into meal prep containers.
