- 1 can chickpeas, drained and rinsed
- 1/2 cup olives, sliced
- 1/2 cup feta cheese, crumbled
- 1 cucumber, diced
- 1 cup tomatoes, diced
- 3 tbsp olive oil
- 2 tbsp lemon juice
- 1 tsp oregano
- Salt and pepper to taste
Instructions
- Marinate the chicken strips with olive oil, lemon juice, oregano, salt, and pepper for at least 30 minutes.
- Cook the marinated chicken in a grill pan over medium-high heat for about 6-8 minutes on each side until fully cooked.
- Prepare the bowl by mixing chickpeas, olives, feta, cucumber, and tomatoes in a large bowl.
- Assemble the cooked chicken slices on top of the salad mix.
- Dress with a mixture of olive oil, lemon juice, salt, and pepper.
