Description

Succulent grilled chicken thighs paired with a crunchy cabbage slaw and creamy guacamole, all wrapped in warm tortillas for a delightful taco experience.


Ingredients

  • 2 1/2 lbs boneless, skinless chicken thighs
  • 1/3 cup mayonnaise
  • Juice from 1 lemon
  • 2 tsp sea salt
  • 1 tsp ground black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 small purple or green cabbage (or 1/2 of each)
  • 3/4 cup grated carrots (1 large carrot)
  • Juice from 1 to 2 limes
  • 1 tbsp olive oil
  • 2 tbsp fresh cilantro, chopped
  • Salt and pepper (to taste)
  • 2 large avocados
  • Juice from 1 lime
  • 2 tbsp fresh cilantro, chopped
  • 2 tbsp diced shallot
  • 3 tbsp diced tomatoes
  • 1 to 2 garlic cloves, minced
  • 1 tbsp mayonnaise
  • 1 tbsp avocado oil
  • Salt and pepper (to taste)
  • 12 small tortillas (corn, flour, or both)
  • 1/2 cup crumbled queso fresco
  • Hot sauce
  • 2 limes, quartered

Instructions

  1. Combine the mayonnaise, lemon juice, sea salt, black pepper, garlic powder, onion powder, smoked paprika, dried oregano, cumin, and coriander in a bowl. Add the chicken and marinate for at least 30 minutes.
  2. Shred the cabbage and grate the carrots into a large bowl. Squeeze in lime juice and drizzle with olive oil. Toss in cilantro, adding salt and pepper to taste.
  3. Scoop out the avocado flesh into a separate bowl. Add lime juice, cilantro, diced shallot, tomatoes, minced garlic, mayonnaise, and avocado oil. Mash until desired creaminess is reached.
  4. Preheat the grill to medium-high heat. Grill chicken for 6-8 minutes per side until fully cooked. Let rest before slicing.
  5. Warm tortillas on the grill or in a pan. Assemble tacos with grilled chicken, cabbage slaw, and guacamole. Top with queso fresco and a squeeze of lime juice.

Notes

Marinate chicken in advance for enhanced flavor. Customize tacos with additional toppings like radishes or jalapeños.
