Description

A delightful macaroni salad featuring a creamy dressing, vibrant vegetables, and tender ham, perfect for summer picnics and gatherings.


Ingredients

  • 8 ounces elbow macaroni
  • 1 cup diced ham
  • 1 cup diced celery
  • 1 cup diced bell peppers
  • 1 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon apple cider vinegar
  • Salt and pepper to taste
  • Optional: Chopped green onions or hard-boiled eggs for garnish

Instructions

  1. Boil water in your large pot. Add the elbow macaroni and cook according to package instructions until al dente. Drain in a colander, then rinse under cold water to halt the cooking process and cool it down.
  2. Fold together the cooled macaroni, diced ham, celery, and bell peppers in a large mixing bowl until evenly distributed.
  3. Whisk together the mayonnaise, Dijon mustard, apple cider vinegar, salt, and pepper in a separate small bowl.
  4. Pour the dressing over the macaroni mixture. Use a spatula to toss until coated.
  5. Cover the salad and refrigerate for at least one hour before serving.
  6. Top with chopped green onions or slices of hard-boiled eggs if desired.
