Description

A delightful Greek Chicken Dinner featuring juicy chicken breasts, creamy tzatziki, feta cheese, cherry tomatoes, and olives that brings the essence of Mediterranean cooking to your table.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup tzatziki sauce
  • 1/2 cup crumbled feta cheese
  • 1 cup cherry tomatoes, halved
  • 1/2 cup Kalamata and green olives, pitted and sliced
  • 2 tablespoons extra virgin olive oil
  • 3 cloves garlic, minced
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Heat about 2 tablespoons of olive oil in a sturdy skillet over medium heat until shimmering.
  2. Season both sides of the chicken breasts with salt, pepper, and a sprinkle of oregano.
  3. Add the seasoned chicken to the heated skillet. Cook until golden brown, about 6-7 minutes per side.
  4. Remove the chicken from the skillet and set aside to rest.
  5. Sauté minced garlic in the same skillet for about one minute until fragrant.
  6. Toss in the cherry tomatoes and olives, cooking until the tomatoes soften, about 3 to 4 minutes.
  7. Return the chicken to the skillet and drizzle with fresh lemon juice, sprinkle with feta and top with tzatziki.
  8. Serve hot, optionally garnishing with fresh herbs.

Notes

For added flavor, marinate the chicken for at least an hour in olive oil and lemon juice before cooking.
