- 4 boneless, skinless chicken breasts
- 1 cup tzatziki sauce
- 1/2 cup crumbled feta cheese
- 1 cup cherry tomatoes, halved
- 1/2 cup Kalamata and green olives, pitted and sliced
- 2 tablespoons extra virgin olive oil
- 3 cloves garlic, minced
- 2 tablespoons fresh lemon juice
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- Heat about 2 tablespoons of olive oil in a sturdy skillet over medium heat until shimmering.
- Season both sides of the chicken breasts with salt, pepper, and a sprinkle of oregano.
- Add the seasoned chicken to the heated skillet. Cook until golden brown, about 6-7 minutes per side.
- Remove the chicken from the skillet and set aside to rest.
- Sauté minced garlic in the same skillet for about one minute until fragrant.
- Toss in the cherry tomatoes and olives, cooking until the tomatoes soften, about 3 to 4 minutes.
- Return the chicken to the skillet and drizzle with fresh lemon juice, sprinkle with feta and top with tzatziki.
- Serve hot, optionally garnishing with fresh herbs.
Notes
For added flavor, marinate the chicken for at least an hour in olive oil and lemon juice before cooking.
