- 2 Boneless, skinless chicken breasts
- 1 Zucchini, chopped
- 1 Bell pepper, chopped
- 1 Red onion, chopped
- 2 tbsp Olive oil
- 3 cloves Garlic, minced
- 2 tbsp Lemon juice
- Salt to taste
- Pepper to taste
Instructions
- Cut the chicken into bite-sized pieces.
- Chop zucchini, bell pepper, and red onion into similar-sized pieces.
- Combine olive oil, minced garlic, lemon juice, salt, and pepper in a bowl to create the marinade.
- Add chicken and vegetables to the marinade and toss to coat. Let it marinate for at least 30 minutes.
- Preheat the grill to medium-high heat.
- Thread the marinated chicken and vegetables onto skewers, alternating between them.
- Grill each skewer for about 10-15 minutes, turning occasionally, until the chicken reaches 165°F.
- Serve warm and enjoy!
Notes
These skewers can be marinated up to 24 hours in advance. You can also customize the vegetables and marinades to your liking.
