Description

Delicious grilled chicken skewers marinated with lemon and garlic, paired with fresh vegetables for a perfect summer meal.


Ingredients

  • 2 Boneless, skinless chicken breasts
  • 1 Zucchini, chopped
  • 1 Bell pepper, chopped
  • 1 Red onion, chopped
  • 2 tbsp Olive oil
  • 3 cloves Garlic, minced
  • 2 tbsp Lemon juice
  • Salt to taste
  • Pepper to taste

Instructions

  1. Cut the chicken into bite-sized pieces.
  2. Chop zucchini, bell pepper, and red onion into similar-sized pieces.
  3. Combine olive oil, minced garlic, lemon juice, salt, and pepper in a bowl to create the marinade.
  4. Add chicken and vegetables to the marinade and toss to coat. Let it marinate for at least 30 minutes.
  5. Preheat the grill to medium-high heat.
  6. Thread the marinated chicken and vegetables onto skewers, alternating between them.
  7. Grill each skewer for about 10-15 minutes, turning occasionally, until the chicken reaches 165°F.
  8. Serve warm and enjoy!

Notes

These skewers can be marinated up to 24 hours in advance. You can also customize the vegetables and marinades to your liking.
