Description

Enjoy a hearty breakfast sandwich with flavorful homemade sausage, perfectly fried eggs, and creamy avocado layered in toasted English muffins.


Ingredients

  • 1 lb ground pork
  • 1 lb ground turkey (thigh or breast)
  • 1 tsp dried garlic
  • 1 tsp dried onion
  • 1 tsp paprika
  • 2 to 3 tsp sea salt
  • ½ tsp ground black pepper
  • 3 tbsp pure maple syrup
  • 2 to 3 tbsp fresh chopped parsley
  • 4 English muffins
  • 4 large eggs
  • 4 slices cheddar cheese
  • 4 tbsp mayonnaise
  • 1 large avocado
  • Sea salt and pepper (to season avocado)
  • 1 tbsp lemon juice

Instructions

  1. Combine the meats in a large mixing bowl until evenly mixed and smooth.
  2. Add seasonings: garlic, onion, paprika, salt, pepper, maple syrup, and parsley.
  3. Form patties about ¼-inch thick and place on a parchment-lined tray.
  4. Heat a skillet over medium heat and lightly grease. Cook patties for 4-5 minutes per side until golden brown and internal temperature reaches 160°F.
  5. Toast the English muffins until golden brown.
  6. Cook eggs to your liking, seasoning with salt and pepper.
  7. Assemble sandwiches by spreading mayonnaise on toasted muffins, adding sausage, cheese, eggs, avocado, and lemon juice.
  8. Finish with the muffin top and serve.

Notes
