Description

A vibrant and refreshing dish featuring grilled chicken marinated in honey and lime, topped with a fresh mango salsa.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons honey
  • 2 limes (juiced)
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 ripe mango (diced)
  • 1 red bell pepper (diced)
  • 1/4 red onion (diced)
  • 1/4 cup cilantro (chopped)
  • 1 jalapeño (optional, diced)

Instructions

  1. Marinate the chicken: In a mixing bowl, whisk together honey, lime juice, olive oil, garlic powder, salt, and pepper. Coat the chicken breasts with the marinade and allow them to marinate for at least 30 minutes, up to 2-4 hours.
  2. Preheat the grill to medium-high heat.
  3. Grill the chicken: Place the marinated chicken on the grill and cook for 6-7 minutes on each side until internal temperature reaches 165°F.
  4. Make the salsa: In a bowl, combine diced mango, red bell pepper, red onion, cilantro, and diced jalapeño. Toss with salt and set aside.
  5. Serve: Let the chicken rest for a couple of minutes, then slice and top with mango salsa.

Notes

For maximum flavor, marinate the chicken overnight. Can substitute chicken thighs or use pineapple if mango is unavailable.
