Description

Ingredients

  • 1/4 cup honey
  • 1/4 cup lime juice, freshly squeezed
  • 2 tablespoons soy sauce (low-sodium recommended)
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • Cooked rice for serving
  • Sliced avocado for serving

Instructions

  1. Prepare the Marinade: In a small mixing bowl, whisk together the honey, lime juice, soy sauce, and olive oil until well combined.
  2. Season the Chicken: Generously season the chicken breasts with salt and pepper, then coat them in the honey-lime mixture.
  3. Cook the Chicken: Heat a skillet over medium heat. Place the chicken breasts in the pan, cooking until golden brown, about 6-7 minutes on each side.
  4. Rest and Slice: Remove the chicken and let it rest for 5 minutes before slicing against the grain.
  5. Serve: Plate the chicken over rice, adding avocado slices on top and drizzling with leftover sauce.
