Description

A comforting and flavorful dish featuring juicy chicken coated in a sweet and tangy honey mustard glaze, paired with tender baby potatoes.

Ingredients

Scale
  • 4 chicken breasts (skinless or bone-in)
  • 3 tablespoons honey
  • 2 tablespoons Dijon mustard
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 pound baby potatoes (halved)
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Mix the glaze: In a small bowl, whisk together the honey, Dijon mustard, olive oil, salt, and pepper until smooth.
  3. Coat the chicken: Place the chicken breasts on a sheet pan and apply the honey mustard mixture generously.
  4. Prepare the potatoes: In a bowl, toss the halved baby potatoes with garlic powder, thyme, salt, and pepper.
  5. Arrange on the sheet pan: Nestle the seasoned potatoes around the chicken on the sheet pan.
  6. Bake: Slide the pan into the oven and bake for 25-30 minutes, until the chicken is cooked through and potatoes are tender.
  7. Rest: Allow the dish to rest for a few minutes before serving.

Notes

Marinate the chicken in the glaze overnight for deeper flavors. You can try using the air fryer for a quicker option.
