Description

Delicious and easy Lazy Enchiladas that combine frozen taquitos, enchilada sauce, and melted cheese for a comforting meal.


Ingredients

  • 1 package Frozen Taquitos
  • 2 cups Enchilada Sauce
  • 2 cups Shredded Cheese (Cheddar or Mexican blend)
  • Sour Cream (for serving)
  • Fresh Cilantro (for garnish)
  • Diced Avocado (optional, for garnish)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Spread a layer of enchilada sauce across the bottom of a 9×13 inch baking dish.
  3. Place frozen taquitos in a neat row on top of the sauce.
  4. Pour more enchilada sauce over the taquitos and sprinkle with shredded cheese.
  5. Bake for 20-25 minutes until the cheese is bubbly and golden.
  6. Serve with sour cream and your favorite toppings.

Notes

You can prepare the enchiladas the night before and store them in the refrigerator to save time before baking.
