Delicious and easy Lazy Enchiladas that combine frozen taquitos, enchilada sauce, and melted cheese for a comforting meal.

- 1 package Frozen Taquitos
- 2 cups Enchilada Sauce
- 2 cups Shredded Cheese (Cheddar or Mexican blend)
- Sour Cream (for serving)
- Fresh Cilantro (for garnish)
- Diced Avocado (optional, for garnish)
Instructions
- Preheat the oven to 375°F (190°C).
- Spread a layer of enchilada sauce across the bottom of a 9×13 inch baking dish.
- Place frozen taquitos in a neat row on top of the sauce.
- Pour more enchilada sauce over the taquitos and sprinkle with shredded cheese.
- Bake for 20-25 minutes until the cheese is bubbly and golden.
- Serve with sour cream and your favorite toppings.
Notes
You can prepare the enchiladas the night before and store them in the refrigerator to save time before baking.
