A hearty Loaded Potato Taco Bowl featuring roasted potatoes, savory taco meat, and vibrant toppings for a delightful and satisfying meal.


Ingredients

  • 2 pounds russet potatoes, diced
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 pound ground beef or turkey
  • 1 tablespoon taco seasoning
  • 1/2 cup tomato sauce
  • 1/4 cup water
  • 1 cup shredded cheddar cheese
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1 avocado, sliced
  • 1/2 cup sour cream
  • 1/4 cup chopped cilantro
  • Sliced green onions
  • Jalapeño slices (optional)
  • Corn kernels (optional)
  • Black beans (optional)
  • Lime wedges (for serving)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Wash and dice the russet potatoes into even cubes.
  3. Toss the potatoes with olive oil, paprika, garlic powder, salt, and black pepper.
  4. Spread them evenly on a baking sheet lined with parchment paper and roast for 25–30 minutes, flipping halfway.
  5. Heat a skillet over medium-high heat and brown the ground beef or turkey.
  6. Sprinkle the taco seasoning over the meat, then add tomato sauce and water; simmer for 5 minutes.
  7. Layer the roasted potatoes as a base in a large bowl.
  8. Spoon the taco meat over the top.
  9. Sprinkle with cheese, lettuce, tomatoes, and avocado; add sour cream and garnish with cilantro and green onions.
  10. Serve with lime wedges on the side.

Notes

Prep potatoes and taco meat in advance to speed up dinner time. Customize with different proteins or toppings as desired.
