- 8 oz pasta (penne or fettuccine)
- 2 chicken breasts
- Salt and pepper to taste
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1 cup sundried tomatoes, chopped
- 2 cups spinach
- 1 cup heavy cream
- 1/2 cup grated parmesan cheese
- Fresh basil, for garnish
Instructions
- Cook the pasta: Bring a pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Once cooked, drain and set aside.
- Season the chicken: Generously sprinkle salt and pepper over the chicken breasts.
- Sear the chicken: In a large skillet, pour in the olive oil and heat over medium heat. Add the chicken breasts and sear for 6-7 minutes on each side until golden brown. Remove from skillet and set aside.
- Sauté the garlic: In the same skillet, add the minced garlic and sauté for about 1 minute.
- Add sundried tomatoes and spinach: Introduce the chopped sundried tomatoes and fresh spinach. Cook until spinach wilts.
- Stir in the cream: Pour the heavy cream into the skillet, bringing it to a gentle simmer. Stir in the grated parmesan cheese.
- Slice the chicken: Take the rested chicken breasts and slice them into bite-sized pieces. Return to the skillet.
- Combine with pasta: Add the drained pasta to the skillet and gently toss together.
- Garnish and serve: Finish with fresh basil and serve.
Notes
This dish is even better when allowed to sit for a few hours before serving. Feel free to substitute chicken with shrimp or tofu.
