Description

A romantic and creamy dish combining chicken, pasta, sundried tomatoes, and spinach, perfect for special occasions or cozy family dinners.


Ingredients

  • 8 oz pasta (penne or fettuccine)
  • 2 chicken breasts
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 cup sundried tomatoes, chopped
  • 2 cups spinach
  • 1 cup heavy cream
  • 1/2 cup grated parmesan cheese
  • Fresh basil, for garnish

Instructions

  1. Cook the pasta: Bring a pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Once cooked, drain and set aside.
  2. Season the chicken: Generously sprinkle salt and pepper over the chicken breasts.
  3. Sear the chicken: In a large skillet, pour in the olive oil and heat over medium heat. Add the chicken breasts and sear for 6-7 minutes on each side until golden brown. Remove from skillet and set aside.
  4. Sauté the garlic: In the same skillet, add the minced garlic and sauté for about 1 minute.
  5. Add sundried tomatoes and spinach: Introduce the chopped sundried tomatoes and fresh spinach. Cook until spinach wilts.
  6. Stir in the cream: Pour the heavy cream into the skillet, bringing it to a gentle simmer. Stir in the grated parmesan cheese.
  7. Slice the chicken: Take the rested chicken breasts and slice them into bite-sized pieces. Return to the skillet.
  8. Combine with pasta: Add the drained pasta to the skillet and gently toss together.
  9. Garnish and serve: Finish with fresh basil and serve.

Notes

This dish is even better when allowed to sit for a few hours before serving. Feel free to substitute chicken with shrimp or tofu.
