Description

A creamy, dreamy pasta dish with shrimp, sun-dried tomatoes, and fresh herbs, perfect for romantic dinners.

Ingredients

Scale
  • 8 oz fettuccine or linguine
  • 1 lb shrimp, peeled and deveined
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 cup fresh spinach
  • 1/4 cup fresh basil, chopped
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside, tossing with a drizzle of olive oil to prevent sticking.
  2. Sauté the Shrimp: In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant. Add the shrimp to the pan, cooking for 2–3 minutes, or until they turn pink and opaque.
  3. Create the Sauce: Stir in the chopped sun-dried tomatoes and the heavy cream, bringing the mixture to a gentle simmer.
  4. Add Cheese: Sprinkle in the grated Parmesan cheese, stirring continuously until it melts smoothly into the sauce.
  5. Incorporate Greens: Mix in the fresh spinach and basil, stirring until they wilt just slightly.
  6. Combine Everything: Add the drained pasta to the skillet, gently tossing to coat each strand in the delightful sauce. Season with salt and pepper to taste.
  7. Serve: Plate your Marry Me Shrimp Pasta warm, finishing with an extra sprinkle of Parmesan and fresh basil.

Notes

This dish can be made in advance; simply store the sauce separately before combining with pasta and shrimp when ready to serve.
