Description

A vibrant and creamy one-pot meal that blends the flavors of Mexican fajitas with hearty pasta, featuring chicken, bell peppers, and a zesty sauce.


Ingredients

  • 2 chicken breasts, diced
  • 2 bell peppers (any color), sliced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 8 oz pasta (penne or fusilli)
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat a drizzle of olive oil in a large pot over medium heat. Add the diced chicken and cook until browned, about 5-7 minutes.
  2. Add the sliced bell peppers, diced onion, and minced garlic. Sauté until the veggies soften, about 4-5 minutes.
  3. Sprinkle in the chili powder, cumin, paprika, salt, and pepper. Stir well to coat all ingredients and let the spices toast for 1-2 minutes.
  4. Pour in the chicken broth and heavy cream. Add the pasta, ensuring it mixes in with the other ingredients.
  5. Bring the mixture to a boil, then reduce heat and cover. Cook for 12-15 minutes until pasta is al dente, stirring occasionally.
  6. Adjust seasoning to taste before serving.
  7. Garnish with fresh cilantro before serving.
