Description

A vibrant one pot meal featuring juicy chicken, tender orzo, burst cherry tomatoes, and creamy feta, perfect for family dinners.


Ingredients

  • 4 chicken breasts
  • 1 cup orzo pasta
  • 1 cup cherry tomatoes, halved
  • 1/2 cup feta cheese, crumbled
  • 4 cloves garlic, minced
  • 4 cups chicken broth
  • 2 tablespoons olive oil
  • 2 teaspoons Greek seasoning
  • 2 cups fresh spinach (optional)
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium-high heat.
  2. Season both sides of chicken breasts with salt, pepper, and Greek seasoning, then brown in the pot for 4-5 minutes per side.
  3. Remove the chicken and set aside.
  4. Sauté minced garlic and cherry tomatoes in the same pot until softened.
  5. Stir in orzo and chicken broth; bring to a simmer.
  6. Return the chicken to the pot, cover, and reduce heat for 10-12 minutes until orzo is tender.
  7. Finish with feta and spinach; serve warm.
