  • 1 packet (2 1/4 teaspoons) active dry yeast
  • 1 teaspoon salt
  • 1 cup whole milk
  • 1/2 cup unsalted butter
  • 2 large eggs
  • 1 tablespoon cinnamon
  • 1/2 cup brown sugar
  • 1 cup powdered sugar
  • 2 tablespoons cream cheese
  • 1 teaspoon vanilla extract
  • 12 tablespoons milk (for glaze)

Instructions

  1. Prepare the Dough: In a large mixing bowl, combine the flour, granulated sugar, active dry yeast, and salt. In a saucepan, heat the milk and unsalted butter over low heat until warm. Pour this mixture into your dry ingredients and stir well with a wooden spoon.
  2. Incorporate Eggs: Once combined, mix in the eggs one at a time, kneading the mixture until a soft dough forms. Your hands will get a little sticky — don’t fret! This is part of the fun.
  3. Knead and Rise: Dust your countertop with flour and knead the dough for about 5–7 minutes until it’s smooth and elastic. Return it to the bowl, cover with a kitchen towel, and let it rise in a warm place until doubled in size, about 60 minutes.
  4. Shape the Rolls: Roll the dough out onto a floured surface into a rectangle about 15×20 inches. Smother the rolled-out dough with melted butter, then sprinkle the cinnamon and brown sugar evenly over the surface.
  5. Roll and Cut: Starting from one long edge, roll the dough tightly into a log. Use a sharp knife or dental floss to cut the log into 12 equal rolls, each about 1.5 inches thick.
  6. Overnight Chill: Place these rolls in a greased baking dish, cover with plastic wrap, and refrigerate overnight. This step allows all those flavors to meld together beautifully.
  7. Bake to Perfection: The next morning, take the rolls out of the fridge and let them rise for another 30 minutes at room temperature. Preheat your oven to 375°F (190°C) and bake the rolls for 25–30 minutes until golden brown.
  8. Glaze: While the rolls cool slightly, whisk together powdered sugar, cream cheese, vanilla extract, and enough milk until the glaze reaches your desired consistency. Drizzle over the warm rolls while still hot.
