- 4 slices sourdough bread
- 2 tablespoons unsalted butter
- 1/2 cup fresh mozzarella cheese, sliced
- 1/4 cup fresh basil pesto
Instructions
- Heat a heavy-bottomed skillet over medium heat.
- Butter one side of each slice of sourdough.
- Spread a generous amount of basil pesto on the unbuttered side of one slice.
- Add mozzarella cheese slices on top of the pesto.
- Assemble the sandwich with the other slice of bread, buttered side facing up.
- Grill the sandwich until golden brown and crispy, about 3-4 minutes per side.
- Serve hot, sliced in half, with extra pesto if desired.
Notes
Adding garlic powder to the butter enhances flavor. Store pesto in the fridge for up to a week.
