- 12 oz Tortellini Pasta
- 1 cup Pesto Sauce
- 1 cup Cherry Tomatoes, halved
- 2 cups Fresh Spinach
- 1/2 cup Parmesan Cheese, grated
- 2 tbsp Olive Oil
- Salt and Pepper, to taste
Instructions
- Cook the tortellini in boiling salted water according to package instructions until tender yet firm. Drain and set aside.
- Combine the warm tortellini, pesto sauce, halved cherry tomatoes, and fresh spinach in a large mixing bowl.
- Season with olive oil, salt, and pepper, then gently toss to coat.
- Top with grated Parmesan cheese.
- Serve immediately or chill in the refrigerator for 30 minutes before serving.
Notes
For best results, don’t rinse the tortellini after cooking to retain the starch that helps the pesto adhere.
