Description

A moist and tender carrot bread filled with grated carrots and crunchy pistachios, topped with a creamy and luscious cream cheese frosting.


Ingredients

  • 2 large eggs (at room temp)
  • 1/2 cup Greek yogurt (or sour cream)
  • 1/2 cup white granulated sugar
  • 1 tsp vanilla extract
  • 1/3 cup unsalted butter (melted)
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp sea salt
  • 1 tsp ground cinnamon
  • 1 1/2 cups grated carrots (about 2 large carrots)
  • 1/2 cup pistachios (diced)
  • 1/2 cup unsalted butter (softened at room temp)
  • 8 oz cream cheese (softened at room temp)
  • 2 tbsp heavy cream
  • 1 tsp vanilla extract
  • Pinch of sea salt
  • 2 cups powdered sugar
  • Orange food coloring
  • 2 tbsp finely diced pistachios (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease your loaf pan.
  2. Whisk together eggs, Greek yogurt, sugar, and vanilla extract until creamy and smooth.
  3. Pour in the melted butter and mix until well combined.
  4. Whisk together flour, baking powder, baking soda, sea salt, and cinnamon in another bowl.
  5. Gradually add the dry mixture to the wet ingredients, taking care not to overmix.
  6. Fold in the grated carrots and diced pistachios gently until well dispersed.
  7. Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
  8. Bake for 50–60 minutes or until a toothpick inserted comes out clean.
  9. Allow the bread to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
  10. Beat the softened butter and cream cheese until light and fluffy.
  11. Add heavy cream, vanilla extract, and a pinch of salt, mixing until smooth.
  12. Gradually add powdered sugar and mix until creamy.
  13. Transfer the frosting into a pastry bag fitted with a small round nozzle and pipe little carrot shapes onto parchment paper.
  14. Let them set for 30 minutes before garnishing your bread.

Notes

For an enhanced flavor, prepare the bread a day in advance. Frost on the day you plan to serve it.
