A moist and tender carrot bread filled with grated carrots and crunchy pistachios, topped with a creamy and luscious cream cheese frosting.

- 1/2 cup Greek yogurt (or sour cream)
- 1/2 cup white granulated sugar
- 1 tsp vanilla extract
- 1/3 cup unsalted butter (melted)
- 1 cup all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp sea salt
- 1 tsp ground cinnamon
- 1 1/2 cups grated carrots (about 2 large carrots)
- 1/2 cup pistachios (diced)
- 1/2 cup unsalted butter (softened at room temp)
- 8 oz cream cheese (softened at room temp)
- 2 tbsp heavy cream
- 1 tsp vanilla extract
- Pinch of sea salt
- 2 cups powdered sugar
- Orange food coloring
- 2 tbsp finely diced pistachios (for garnish)
Instructions
- Preheat your oven to 350°F (175°C) and grease your loaf pan.
- Whisk together eggs, Greek yogurt, sugar, and vanilla extract until creamy and smooth.
- Pour in the melted butter and mix until well combined.
- Whisk together flour, baking powder, baking soda, sea salt, and cinnamon in another bowl.
- Gradually add the dry mixture to the wet ingredients, taking care not to overmix.
- Fold in the grated carrots and diced pistachios gently until well dispersed.
- Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
- Bake for 50–60 minutes or until a toothpick inserted comes out clean.
- Allow the bread to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
- Beat the softened butter and cream cheese until light and fluffy.
- Add heavy cream, vanilla extract, and a pinch of salt, mixing until smooth.
- Gradually add powdered sugar and mix until creamy.
- Transfer the frosting into a pastry bag fitted with a small round nozzle and pipe little carrot shapes onto parchment paper.
- Let them set for 30 minutes before garnishing your bread.
Notes
For an enhanced flavor, prepare the bread a day in advance. Frost on the day you plan to serve it.
