Description

Ingredients

  • 1/2 cup unsalted butter
  • 1 cup dark chocolate, chopped
  • 1/2 cup powdered sugar
  • 2 large eggs
  • 2 large egg yolks
  • 1 teaspoon vanilla extract
  • 1/4 cup all-purpose flour
  • 1/4 cup ground pistachios
  • Pinch of salt
  • Pistachios for garnish
  • Vanilla ice cream (optional)

Instructions

  1. Preheat your oven to 425°F (220°C). Grease four ramekins generously with butter and place them on a baking sheet.
  2. Melt together the butter and dark chocolate in a heatproof bowl over a pot of simmering water.
  3. Combine the powdered sugar into the chocolate mixture until smooth.
  4. Add the whole eggs and egg yolks, whisking until rich and velvety.
  5. Mix in the vanilla extract, flour, ground pistachios, and a pinch of salt until just combined.
  6. Fill the ramekins with the batter, leaving a little room at the top.
  7. Bake for 12-14 minutes until the edges are firm but the center remains soft.
  8. Cool for 1 minute and carefully invert onto plates, garnishing with chopped pistachios.
  9. Enjoy warm, preferably with vanilla ice cream.

Notes

Grease ramekins well and avoid overbaking to maintain the molten center.
