Description

Delightful pistachio cream cookies combining nutty flavors with rich chocolate chunks, perfect for any occasion.


Ingredients

  • 1 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 3/4 cup brown sugar, packed
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup pistachios, chopped
  • 1 cup chocolate chunks
  • 1/2 cup pistachio cream

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in the egg and vanilla extract until incorporated.
  4. In another bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture.
  6. Stir in the chopped pistachios and chocolate chunks until evenly distributed.
  7. Take small amounts of dough and flatten them in your palm.
  8. Place a spoonful of pistachio cream in the center.
  9. Fold the dough around the cream and roll into a ball.
  10. Place on a baking sheet lined with parchment paper, spacing them about 2 inches apart.
  11. Bake for 10-12 minutes or until the edges are lightly golden.
  12. Allow to cool slightly before transferring to a wire rack.

Notes

You can prepare the dough in advance and refrigerate it. Chill for up to 3 days before baking. Experiment with other nuts and flavors for variety.
