Description
Decadent swirl of flavors with warm cinnamon, honey, and nutty pistachios in soft dough, perfect for breakfast or brunch.

- 1 cup whole milk
- 1 tbsp dry active yeast
- 2 large eggs (at room temp)
- 1/3 cup unsalted butter (melted)
- 2 tsp vanilla extract
- 1/2 cup white granulated sugar
- 1 tsp sea salt
- 4 to 4 1/2 cups all-purpose flour
- 1 1/2 cups shelled, roasted pistachios
- 1/2 cup white granulated sugar (for filling)
- 2 tsp ground cinnamon
- 1 tsp ground cardamom
- 2/3 cup unsalted butter (softened at room temp)
- 1/4 cup honey
- 1/2 cup water
- 1/4 cup lemon juice
- 2 large egg yolks + 2 tbsp water (for egg wash)
- 1/3 cup finely diced pistachios (for garnish)
Instructions
- Warm the milk until it’s just warm to the touch.
- Sprinkle the yeast over the milk and let it sit for about 5–10 minutes until foamy.
- Combine the melted butter, sugar, eggs, and salt in a large mixing bowl, mixing well and adding the activated yeast mixture.
- Stir in the flour, one cup at a time, until the dough begins to pull away from the sides of the bowl.
- Knead the dough on a lightly floured surface for about 5–7 minutes, until soft and elastic.
- Place the dough in a greased bowl, cover with a kitchen towel, and let rise in a warm place until it doubles in size, about 1 hour.
- Combine softened butter, sugar, ground cinnamon, ground cardamom, and roasted pistachios in a medium bowl until you achieve a cohesive paste.
- Punch down the risen dough, roll it out into a rectangle about 1/4 inch thick, then spread the pistachio filling evenly over the dough.
- Roll the dough tightly starting from the long edge, pinch the seam, and cut the log into 12 equal pieces.
- Place rolls in a greased baking dish, letting them rise again for 30 minutes.
- Preheat your oven to 350°F (175°C).
- Whisk egg yolks and water for the egg wash and brush the tops of the rolls.
- Bake for 20–25 minutes until golden brown and cooked through.
- Prepare the honey glaze by heating water, honey, and lemon juice in a small saucepan until blended.
- Drizzle the warm honey glaze generously over the baked rolls and sprinkle with finely diced pistachios.
Notes
Make-ahead tips: Prepare the rolls the night before and store them in the refrigerator. In the morning, let them rise at room temperature before baking.
