- 2 pounds Yukon Gold or red potatoes
- 4 strips bacon
- 1/2 cup mayonnaise
- 2 tablespoons apple cider vinegar
- 1 tablespoon Dijon mustard
- 1/2 cup chopped green onions
- Salt and pepper to taste
Instructions
- Boil the potatoes in a large pot of salted boiling water for about 15 minutes, or until fork-tender.
- Cook the bacon in a skillet over medium heat until crispy, about 5-7 minutes.
- Prepare the dressing by mixing mayonnaise, apple cider vinegar, mustard, salt, and pepper in a bowl.
- Cut the cooled potatoes into bite-sized pieces.
- Combine the warm potatoes with the dressing, then fold in the chopped green onions and crumbled bacon.
- Refrigerate for at least 30 minutes to allow flavors to meld.
