Description

A creamy and crunchy potato salad with smoky bacon and fresh green onions, perfect for any gathering.


Ingredients

  • 2 pounds Yukon Gold or red potatoes
  • 4 strips bacon
  • 1/2 cup mayonnaise
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon Dijon mustard
  • 1/2 cup chopped green onions
  • Salt and pepper to taste

Instructions

  1. Boil the potatoes in a large pot of salted boiling water for about 15 minutes, or until fork-tender.
  2. Cook the bacon in a skillet over medium heat until crispy, about 5-7 minutes.
  3. Prepare the dressing by mixing mayonnaise, apple cider vinegar, mustard, salt, and pepper in a bowl.
  4. Cut the cooled potatoes into bite-sized pieces.
  5. Combine the warm potatoes with the dressing, then fold in the chopped green onions and crumbled bacon.
  6. Refrigerate for at least 30 minutes to allow flavors to meld.
