Description

A warm embrace on a plate, this Provencal Chicken features succulent pieces of chicken simmered with cherry tomatoes, olives, garlic, and fresh herbs, transporting you to the sun-drenched hills of France.


Ingredients

  • 2 lbs Chicken pieces (boneless thighs recommended)
  • 1 cup Cherry tomatoes, halved
  • 1/2 cup Black olives (Kalamata or Niçoise)
  • 2 Shallots, finely chopped
  • 3 cloves Garlic, minced
  • 1 cup Dry white wine (or chicken broth)
  • 2 tbsp Olive oil
  • 2 tsp Fresh thyme or rosemary
  • Salt and pepper to taste

Instructions

  1. Heat a splash of olive oil in a heavy skillet over medium heat, letting it shimmer.
  2. Season your chicken pieces generously with salt and pepper.
  3. Add the chicken to the skillet, browning on all sides until golden.
  4. Remove the chicken from the skillet and set it aside.
  5. Toss in the chopped shallots and minced garlic, sautéing until translucent.
  6. Stir in the cherry tomatoes and olives, mixing until the tomatoes soften.
  7. Pour in the white wine, deglazing the skillet and lifting the brown bits.
  8. Return the chicken to the skillet, nestling it into the sauce.
  9. Cover the skillet, reduce the heat to low, and let simmer for 30-40 minutes.
  10. Serve hot, garnished with fresh herbs.

Notes

For make-ahead options, prepare up to the simmering step and refrigerate. Reheat gently before serving.
