- 2 lbs Chicken pieces (boneless thighs recommended)
- 1 cup Cherry tomatoes, halved
- 1/2 cup Black olives (Kalamata or Niçoise)
- 2 Shallots, finely chopped
- 3 cloves Garlic, minced
- 1 cup Dry white wine (or chicken broth)
- 2 tbsp Olive oil
- 2 tsp Fresh thyme or rosemary
- Salt and pepper to taste
Instructions
- Heat a splash of olive oil in a heavy skillet over medium heat, letting it shimmer.
- Season your chicken pieces generously with salt and pepper.
- Add the chicken to the skillet, browning on all sides until golden.
- Remove the chicken from the skillet and set it aside.
- Toss in the chopped shallots and minced garlic, sautéing until translucent.
- Stir in the cherry tomatoes and olives, mixing until the tomatoes soften.
- Pour in the white wine, deglazing the skillet and lifting the brown bits.
- Return the chicken to the skillet, nestling it into the sauce.
- Cover the skillet, reduce the heat to low, and let simmer for 30-40 minutes.
- Serve hot, garnished with fresh herbs.
