Description

Delicious roasted sweet potato rounds topped with creamy brie, tart dried cherries, and crunchy walnuts, perfect as an appetizer or side dish.


Ingredients

  • 2 large sweet potatoes, sliced into 1/2-inch rounds
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 ounces brie cheese, sliced
  • 1/4 cup dried cherries
  • 1/4 cup walnuts, toasted and chopped
  • 1 tablespoon fresh thyme leaves

Instructions

  1. Preheat your oven: Set your oven to 400°F (200°C).
  2. Prepare the sweet potatoes: Wash thoroughly and slice into 1/2-inch rounds.
  3. Season: In a mixing bowl, combine sweet potato rounds with olive oil, salt, and pepper.
  4. Roast: Spread the rounds on a baking sheet and roast for 25-30 minutes, flipping halfway through.
  5. Add the toppings: Layer brie, cherries, and walnuts on top of the roasted rounds.
  6. Final roast: Return to the oven for 5-7 minutes until brie softens.
  7. Serve: Cool slightly before transferring to a platter.

Make-ahead tips: You can slice and season sweet potatoes a day in advance. You can also use an air fryer for this recipe at 390°F (199°C) for 15-20 minutes.
