- 4 ounces brie cheese, sliced
- 1/4 cup dried cherries
- 1/4 cup walnuts, toasted and chopped
- 1 tablespoon fresh thyme leaves
Instructions
- Preheat your oven: Set your oven to 400°F (200°C).
- Prepare the sweet potatoes: Wash thoroughly and slice into 1/2-inch rounds.
- Season: In a mixing bowl, combine sweet potato rounds with olive oil, salt, and pepper.
- Roast: Spread the rounds on a baking sheet and roast for 25-30 minutes, flipping halfway through.
- Add the toppings: Layer brie, cherries, and walnuts on top of the roasted rounds.
- Final roast: Return to the oven for 5-7 minutes until brie softens.
- Serve: Cool slightly before transferring to a platter.
