Description

A vibrant and satisfying bowl featuring grilled shrimp, creamy avocado, and a refreshing mango salsa, perfect for any occasion.


Ingredients

  • 1 lb shrimp, peeled and deveined
  • 2 avocados, diced
  • 1 mango, diced
  • 1 red onion, finely chopped
  • 1 red bell pepper, diced
  • 1 lime, juiced
  • 2 tbsp olive oil
  • 1 tsp chili powder
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Marinate the shrimp: In a mixing bowl, whisk together the olive oil, lime juice, chili powder, salt, and pepper. Add the shrimp, tossing to coat them well. Let them marinate for about 15 minutes.
  2. Grill the shrimp: Preheat your grill or grill pan to medium heat. Once hot, place the marinated shrimp on the grill and cook for about 2-3 minutes per side until pink and fully cooked.
  3. Prepare the mango salsa: In another bowl, combine the diced mango, red onion, and red bell pepper. Gently mix to combine.
  4. Assemble your bowls: Start with a scoop of diced avocado at the bottom of each bowl. Layer the grilled shrimp on top, followed by the mango salsa. Drizzle with lime juice and garnish with fresh cilantro.

Notes

Make ahead by prepping the salsa and marinating the shrimp in advance, but cook just before serving for the best texture.
