- 1 lb Fresh Shrimp
- 1 Ripe Mango, diced
- 1 Ripe Avocado, diced
- 1 cup Long-grain or Jasmine Rice
- 1 Bell Pepper, diced
- 1 Cucumber, sliced
- 2 tbsp Fresh Lime Juice
- 2 tbsp Olive Oil
- Salt, to taste
- Pepper, to taste
Instructions
- Cook the rice according to package instructions.
- Heat olive oil in a skillet over medium heat. Add shrimp, seasoning with salt and pepper. Cook until pink and opaque, about 2-3 minutes per side.
- Chop the mango, avocado, bell pepper, and cucumber while the shrimp cooks.
- Combine cooked rice, sautéed shrimp, diced mango, avocado, bell peppers, and cucumbers in a large bowl.
- Add freshly squeezed lime juice and toss gently.
- Serve immediately in individual bowls.
