Description

A vibrant bowl featuring fresh shrimp, creamy avocado, and sweet mango, all combined with crunchy veggies and zesty lime juice.


Ingredients

  • 1 lb Fresh Shrimp
  • 1 Ripe Mango, diced
  • 1 Ripe Avocado, diced
  • 1 cup Long-grain or Jasmine Rice
  • 1 Bell Pepper, diced
  • 1 Cucumber, sliced
  • 2 tbsp Fresh Lime Juice
  • 2 tbsp Olive Oil
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Cook the rice according to package instructions.
  2. Heat olive oil in a skillet over medium heat. Add shrimp, seasoning with salt and pepper. Cook until pink and opaque, about 2-3 minutes per side.
  3. Chop the mango, avocado, bell pepper, and cucumber while the shrimp cooks.
  4. Combine cooked rice, sautéed shrimp, diced mango, avocado, bell peppers, and cucumbers in a large bowl.
  5. Add freshly squeezed lime juice and toss gently.
  6. Serve immediately in individual bowls.

Notes

Prepare rice and chop veggies in advance for a quicker cooking process. Make sure to keep an eye on the shrimp to avoid overcooking.
