- 2 pounds baby potatoes
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- Salt and pepper to taste
- Fresh herbs (such as rosemary or thyme) for garnish
Instructions
- Preheat the oven to 425°F (220°C).
- Boil the baby potatoes in a large pot of salted water until fork-tender, about 15-20 minutes.
- Drain the potatoes and let them cool slightly.
- Place the potatoes on a baking sheet lined with parchment paper.
- Using a fork or potato masher, gently smash each potato down to about 1/2 inch thickness.
- Drizzle olive oil over the smashed potatoes and sprinkle with minced garlic, salt, and pepper.
- Roast in the preheated oven for about 20-25 minutes, or until crispy and golden brown.
- Garnish with fresh herbs before serving.
Notes
For extra flavor, consider adding red pepper flakes or different herbs.
