Description

Delicious smashed potatoes with a crispy exterior and creamy interior, perfect as a side or main dish.


Ingredients

  • 2 pounds baby potatoes
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh herbs (such as rosemary or thyme) for garnish

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Boil the baby potatoes in a large pot of salted water until fork-tender, about 15-20 minutes.
  3. Drain the potatoes and let them cool slightly.
  4. Place the potatoes on a baking sheet lined with parchment paper.
  5. Using a fork or potato masher, gently smash each potato down to about 1/2 inch thickness.
  6. Drizzle olive oil over the smashed potatoes and sprinkle with minced garlic, salt, and pepper.
  7. Roast in the preheated oven for about 20-25 minutes, or until crispy and golden brown.
  8. Garnish with fresh herbs before serving.

Notes

For extra flavor, consider adding red pepper flakes or different herbs.
