Description

Delightfully soft and chewy cookies infused with the nutty flavor of pistachio and creamy white chocolate, perfect for any occasion.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 1 (3.4 oz) package pistachio instant pudding mix
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup white chocolate chips
  • 1 cup chopped pistachios

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in the pistachio pudding mix, eggs, and vanilla extract until well combined.
  4. In a separate bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
  6. Fold in the white chocolate chips and chopped pistachios.
  7. Drop spoonfuls of dough onto a baking sheet lined with parchment paper, spacing them about 2 inches apart.
  8. Bake for 10-12 minutes, or until the edges are lightly golden.
  9. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

Ensure butter is at room temperature for better creaming. Store in an airtight container for up to a week.
