Description

A classic Italian pasta dish featuring al dente spaghetti coated in a creamy egg and cheese sauce, with crispy pancetta and freshly cracked black pepper.


Ingredients

  • 400g Spaghetti
  • 150g Pancetta or Bacon
  • 4 large Eggs
  • 100g Parmesan Cheese, freshly grated
  • Black Pepper, to taste
  • Salt, for boiling pasta
  • 2 cloves Garlic, minced (optional)
  • 2 tablespoons Olive Oil

Instructions

  1. Cook the Pasta: Bring a large pot of salted water to boil. Cook the spaghetti until al dente, reserving about a cup of pasta water before draining.
  2. Cook the Pancetta: In a frying pan, add pancetta or bacon over medium heat until crispy and golden.
  3. Whisk the Eggs and Cheese: In a bowl, whisk together the eggs and grated Parmesan until smooth.
  4. Combine Pasta and Bacon: Toss the drained spaghetti with the bacon in the skillet, ensuring the pasta absorbs the flavors.
  5. Add the Egg Mixture: Pour in the egg and cheese mixture, tossing quickly to coat. Gradually add reserved pasta water for desired creaminess.
  6. Season and Serve: Add freshly cracked black pepper to taste. Serve immediately, garnished with more cheese and pepper.

Notes

Best enjoyed fresh, but can be prepped ahead. Avoid scrambling the eggs by mixing off the heat.
