Description

A refreshing Spinach Mandarin Salad packed with sweet mandarins, creamy goat cheese, and crunchy toasted almonds, all drizzled with a honey balsamic dressing.


Ingredients

  • 10 oz baby spinach
  • 1 can mandarin oranges (15 oz, drained) or 4 fresh mandarins, peeled and sectioned
  • 1/4 cup thinly sliced red onion
  • 1/2 cup goat cheese crumbles
  • 1/4 cup slivered almonds, toasted
  • 1/4 cup balsamic vinegar
  • 2 tablespoons honey
  • 1 teaspoon Dijon mustard
  • 2 tablespoons olive oil
  • Pinch of salt and black pepper

Instructions

  1. Wash and dry the baby spinach.
  2. Drain mandarin oranges (if using canned) and pat dry.
  3. Toss spinach with the mandarin segments, red onion, and half of the goat cheese.
  4. Sprinkle toasted almonds over the salad.
  5. Make the dressing by whisking together balsamic vinegar, honey, Dijon mustard, olive oil, salt, and pepper.
  6. Dress the salad and toss gently. Top with the remaining goat cheese.

Notes

Store leftovers in an airtight container in the refrigerator for up to a day. Avoid freezing as spinach does not thaw well.
