- 2 Boneless, skinless chicken breasts
- 1 cup Fresh strawberries, sliced
- 1/2 cup Pecans, chopped
- 4 cups Mixed greens (spinach and arugula)
- 2 tbsp Butter
- 1/4 cup Olive oil
- 2 tbsp Red wine vinegar
- 1 tbsp Honey (optional)
- Salt and Pepper to taste
Instructions
- Preheat your grill over medium heat and season chicken with salt and pepper. Grill for 6-7 minutes per side until cooked through.
- Prepare the salad base by mixing greens, strawberries, and pecans in a large bowl.
- Make the vinaigrette by melting butter in a saucepan and whisking in olive oil, red wine vinegar, and honey. Season with salt and pepper.
- Combine the salad and vinaigrette, then top with sliced chicken and serve immediately.

For best flavor, use ripe strawberries and don’t skimp on seasoning. Serve immediately for optimal crunch.
