Description

A delightful salad featuring tender chicken, juicy strawberries, crunchy pecans, and a creamy poppy seed dressing.

Ingredients

Scale
  • 2 cups shredded chicken (preferably rotisserie)
  • 2 celery stalks, chopped into 1/4 inch pieces
  • 1 green onion, chopped thin
  • 56 large strawberries, diced
  • ⅓ cup chopped pecans
  • ¼ cup mayonnaise
  • 2 tablespoons plain Greek yogurt
  • 1 teaspoon Dijon mustard
  • 1 teaspoon lemon juice
  • 1 tablespoon poppy seeds
  • ½ teaspoon pepper
  • Salt to taste

Instructions

  1. Prepare your ingredients by chopping the celery, green onion, and strawberries. Shred the chicken to your preferred size.
  2. Combine the shredded chicken, celery, green onion, chopped pecans, mayonnaise, Greek yogurt, Dijon mustard, lemon juice, poppy seeds, and pepper in a large mixing bowl and stir to mix well.
  3. Gently fold in the diced strawberries, ensuring even distribution without mashing them.
  4. Serve immediately or chill in the refrigerator for 10-20 minutes before serving to enhance the flavor.

Notes

For a different flavor, swap pecans for walnuts or almonds. Consider adding avocado for creaminess or crumbled feta for a tangy twist.
