Description

A refreshing summer salad featuring grilled chicken, crisp greens, and a creamy tahini dressing, perfect for picnics or casual meals.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 2 tablespoons tahini
  • 1 tablespoon olive oil
  • 1 teaspoon lemon juice
  • Salt and pepper to taste
  • 2 cups mixed salad greens
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • Fresh mint leaves, for garnish

Instructions

  1. Prepare the Dressing: In a medium bowl, whisk together tahini, olive oil, lemon juice, salt, and pepper until smooth and creamy.
  2. Season the Chicken: Lightly season chicken breasts with salt and pepper on both sides.
  3. Cook the Chicken: Preheat your grill or skillet over medium heat. Cook chicken for about 6-7 minutes on each side until golden.
  4. Rest and Slice: Remove chicken from heat and let it rest for a few minutes. Slice thinly.
  5. Assemble the Salad: In a large bowl, combine mixed salad greens, cherry tomatoes, cucumber, and mint. Toss gently.
  6. Dress the Salad: Drizzle tahini dressing over the salad and toss until coated.
  7. Plate and Serve: Arrange sliced chicken on top of the salad and drizzle with extra dressing if desired.

Notes

Make the tahini dressing ahead of time and store it separately to maintain freshness. Customize with seasonal vegetables.
