- Fresh mint leaves, for garnish
Instructions
- Prepare the Dressing: In a medium bowl, whisk together tahini, olive oil, lemon juice, salt, and pepper until smooth and creamy.
- Season the Chicken: Lightly season chicken breasts with salt and pepper on both sides.
- Cook the Chicken: Preheat your grill or skillet over medium heat. Cook chicken for about 6-7 minutes on each side until golden.
- Rest and Slice: Remove chicken from heat and let it rest for a few minutes. Slice thinly.
- Assemble the Salad: In a large bowl, combine mixed salad greens, cherry tomatoes, cucumber, and mint. Toss gently.
- Dress the Salad: Drizzle tahini dressing over the salad and toss until coated.
- Plate and Serve: Arrange sliced chicken on top of the salad and drizzle with extra dressing if desired.
