Description

A delightful salad featuring tender chicken, vibrant vegetables, and crunchy sunflower seeds, all enveloped in a creamy dressing.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup broccoli florets, blanched
  • 1/2 cup sunflower seeds
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup cucumber, diced
  • 1/4 cup red onion, diced
  • 1/3 cup sunflower seed butter
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey or maple syrup
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the shredded chicken, broccoli florets, sunflower seeds, halved cherry tomatoes, diced cucumber, and diced red onion.
  2. In a separate bowl, whisk together the sunflower seed butter, apple cider vinegar, honey or maple syrup, salt, and pepper until smooth.
  3. Pour the dressing over the salad mixture and gently toss to combine.
  4. Serve immediately or chill in the fridge for 15 minutes for enhanced flavors.
