Description

These Thai Peanut Chicken Wraps are a delightful fusion of flavors, featuring tender chicken, crunchy vegetables, and a creamy peanut dressing, all wrapped in soft tortillas.

Ingredients

Scale
  • ½ cup natural, creamy peanut butter
  • 3 tablespoons low sodium soy sauce
  • 2 tablespoons brown sugar or honey
  • 2 tablespoons rice wine vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, minced
  • 12 teaspoons sriracha sauce (to taste)
  • Water, as needed to thin
  • 3 cups cooked chicken breast, chopped
  • 3 cups coleslaw mix
  • 1 cup grated carrots
  • ½ cup fresh cilantro, chopped
  • ½ cup roasted peanuts, roughly chopped
  • 6 large flour tortillas

Instructions

  1. Make the Peanut Dressing: In a medium bowl, whisk together peanut butter, soy sauce, brown sugar (or honey), rice wine vinegar, minced garlic, ginger, and sriracha until smooth. If the mixture feels too thick, gradually add water, one tablespoon at a time, until the dressing reaches your desired pourable consistency.
  2. Prepare the Filling: In a large mixing bowl, combine the chopped chicken, coleslaw mix, grated carrots, chopped cilantro, and roughly chopped roasted peanuts. Gently toss to mix, ensuring all the ingredients are evenly distributed.
  3. Dress the Filling: Pour the prepared peanut dressing over the chicken mixture. Toss again until everything is beautifully coated in that luscious dressing. Allow the mixture to sit for 3-5 minutes to let the flavors meld.
  4. Warm the Tortillas: To soften the tortillas, wrap them in a damp paper towel and microwave for about 30 seconds. They should be pliable and ready for wrapping.
  5. Assemble the Wraps: Lay each tortilla flat on a clean surface. Place about one-sixth of the filling in the center of each tortilla. Fold in the sides and roll up tightly from the bottom to secure the filling inside. If desired, slice diagonally before serving. Enjoy immediately!

Notes

To avoid overfilling the wraps, remember that less is often more. You want each bite to have a balanced mix of flavors!
