Ingredients
Scale
- 1 cup diced tomatoes
- 1/4 cup chopped fresh basil
- 1 clove garlic, minced
- 1 cup ricotta cheese
- 1/2 cup mozzarella cheese, shredded
- 1/4 cup parmesan cheese, grated
- Salt and pepper to taste
- 1 tablespoon olive oil
- Bread slices or crackers for serving
Instructions
- Prepare the Crust: Preheat your oven to 375°F (190°C). Slice your bread into pieces, ideally on a diagonal. Arrange on a baking sheet, drizzle with olive oil, and sprinkle with salt. Bake for 10-12 minutes until golden and crispy.
- Mix the Base: In a mixing bowl, combine the ricotta cheese, mozzarella, and parmesan. Use a spatula to blend until smooth and creamy.
- Add the Goodness: Fold in the diced tomatoes, minced garlic, and fresh basil into the cheese mixture. Season with salt and pepper.
- Transfer the mixture to your baking dish and spread evenly. Bake for 20-25 minutes, or until bubbly and lightly golden.
- Serve Warm: Remove from the oven, let cool slightly, and serve with toasted bread slices or crackers.
Notes
Consider preparing the dip a day in advance to allow flavors to meld. Avoid using watery tomatoes for the best texture.
