Description

A refreshing salad bursting with tropical flavors from pineapple and mango, complemented by hearty chickpeas and vibrant vegetables.


Ingredients

  • 1 can chickpeas (garbanzo beans), drained and rinsed
  • 1 cup pineapple, diced
  • 1 cup mango, diced
  • 1/2 cup pineapple salsa
  • 1/4 cup red onion, diced
  • 1/4 cup bell pepper, diced
  • Salt and pepper to taste
  • Fresh cilantro (optional for garnish)

Instructions

  1. In a large bowl, combine the chickpeas, pineapple, mango, pineapple salsa, red onion, and bell pepper.
  2. Toss gently to mix the ingredients.
  3. Season with salt and pepper to taste.
  4. If desired, garnish with fresh cilantro.
  5. Serve chilled or at room temperature.

Notes

Rinse canned chickpeas thoroughly before using. Allowing the salad to sit in the fridge for about 30 minutes helps flavors develop.
