Description

A comforting and creamy side dish, Twice-Baked Potatoes feature crispy skins filled with a rich blend of buttery potato, sour cream, and cheese.


Ingredients

Scale
  • 4 large russet potatoes
  • 1/2 cup sour cream
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup milk
  • 4 tablespoons butter
  • Salt and pepper to taste
  • 2 green onions, chopped (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and pierce the potatoes with a fork.
  3. Bake in the oven for 45-60 minutes until fork-tender.
  4. Allow to cool, then cut in half lengthwise and scoop out the insides into a mixing bowl.
  5. Mash the potato insides with sour cream, cheddar cheese, milk, butter, salt, and pepper.
  6. Fill the potato skins with the mixture.
  7. Return to the oven and bake for an additional 20 minutes until golden brown.
  8. Garnish with chopped green onions before serving.

Notes

Make-ahead tips: Prepare the potatoes up to be filled a day in advance. Store in the fridge and bake them right before serving.
